Αυτή η εργασία επικεντρώνεται στη διατροφική σύνθεση και τα πιθανά οφέλη για την υγεία του κατσικίσιου γάλακτος στο πλαίσιο της παιδικής διατροφής. Ενώ το αγελαδινό γάλα είναι από καιρό η κυρίαρχη πηγή γαλακτοκομικών προϊόντων για τα παιδιά παγκοσμίως, το κατσικίσιο γάλα αναγνωρίζεται όλο και περισσότερο για το μοναδικό διατροφικό του προφίλ και την καταλληλότητά του ως εναλλακτική λύση, ειδικά για παιδιά με συγκεκριμένες διατροφικές ανάγκες. Η διατριβή διερευνά τη συγκριτική ανάλυση μεταξύ κατσικίσιου γάλακτος και αγελαδινού γάλακτος, επισημαίνοντας τις διαφορές στα μακροθρεπτικά συστατικά, τα μικροθρεπτικά συστατικά και τις βιοδραστικές ενώσεις.
Το κατσικίσιο γάλα περιέχει υψηλότερη συγκέντρωση πρωτεϊνών και μοναδικά λιπαρά οξέα, ιδιαίτερα λιπαρά οξέα μέσης αλυσίδας, τα οποία βοηθούν στην καλύτερη πέψη και απορρόφηση ενέργειας. Επιπλέον, σχηματίζει πιο μαλακό τυρόπηγμα κατά τη διάρκεια της πέψης σε σύγκριση με το αγελαδινό γάλα, καθιστώντας ευκολότερη την πέψη, ειδικά για παιδιά με ευαίσθητο πεπτικό σύστημα. Η θρεπτική σύνθεση του κατσικίσιου γάλακτος, πλούσια σε ασβέστιο, φώσφορο, κάλιο, βιταμίνες Α, C και σύμπλεγμα Β, ενισχύει την υγεία των οστών, την ανοσολογική λειτουργία και τη συνολική ανάπτυξη. Επιπλέον, το χαμηλότερο αλλεργιογόνο δυναμικό του κατσικίσιου γάλακτος προσφέρει μια εναλλακτική λύση για παιδιά με αλλεργίες σε πρωτεΐνες αγελαδινού γάλακτος ή δυσανεξία στη λακτόζη.
Αυτή η διατριβή εξετάζει επίσης τα βιοδραστικά πεπτίδια στο κατσικίσιο γάλα που συμβάλλουν σε αντιμικροβιακές, αντιοξειδωτικές και ανοσορυθμιστικές δραστηριότητες, υποστηρίζοντας την υγεία του εντέρου και μειώνοντας τον κίνδυνο λοιμώξεων. Οι κλινικές μελέτες επανεξετάζονται για να υπογραμμίσουν τις επιπτώσεις του κατσικίσιου γάλακτος στην υγεία, δείχνοντας τις δυνατότητές του στη διαχείριση της δυσανεξίας στη λακτόζη και την προώθηση της ανάπτυξης χωρίς να προκαλούν κοινές αλλεργικές αντιδράσεις που σχετίζονται με το αγελαδινό γάλα. Παρέχονται πρακτικές συστάσεις και μελλοντικές ερευνητικές κατευθύνσεις για την αποτελεσματική ενσωμάτωση του κατσικίσιου γάλακτος στις παιδιατρικές δίαιτες, εξασφαλίζοντας τη βέλτιστη ανάπτυξη.
This work focuses on the nutritional composition and potential health benefits of goat milk in the context of childhood nutrition. While cow's milk has long been the predominant dairy source for children worldwide, goat milk is increasingly recognized for its unique nutritional profile and suitability as an alternative, especially for children with specific dietary needs. The thesis explores the comparative analysis between goat milk and cow's milk, highlighting differences in macronutrients, micronutrients, and bioactive compounds. Goat milk contains a higher concentration of protein and unique fatty acids, particularly medium-chain fatty acids, which aid in better digestion and energy absorption. Additionally, it forms softer curds during digestion compared to cow's milk, making it easier to digest, especially for children with sensitive digestive systems. The nutrient composition of goat milk, rich in calcium, phosphorus, potassium, vitamins A, C, and B-complex, enhances bone health, immune function, and overall growth. Moreover, goat milk’s lower allergenic potential offers an alternative for children with cow’s milk protein allergies or lactose intolerance. This thesis also addresses the bioactive peptides in goat milk that contribute to antimicrobial, antioxidant, and immune-modulatory activities, supporting gut health and reducing the risk of infections. Clinical studies are reviewed to underscore the health impacts of goat milk, showing its potential in managing lactose intolerance and promoting growth without triggering common allergic responses associated with cow's milk. The research concludes by affirming the value of goat milk as a viable nutritional option that meets the dietary needs of children while offering unique health benefits. Practical recommendations and future research directions are provided to integrate goat milk effectively into pediatric diets, ensuring optimal growth and development.
